Caponata Serving Suggestions

Crostini of Caponata - toast some sliced baguette under the grill. Once golden, remove and top with a spoonful of caponata and a sprig of basil.

 

Barbeque with Veru - Delicious served with meat, sausages, or gourmet burgers, straight from the barbeque or grill.

 

Sandwiches - great with cheese, cold meats, or as a vegetarian filling all on its own.

 

Mini tartlets for canapes - just fill some ready made mini tartlet cases with a spoonful of caponata and serve.

Caponata & Goats Cheese Tarts

Makes 6

  • 1 jar of Veru Caponata Melanzane
  • 100g goats cheese, cut into pieces
  • 1 medium egg
  • 50ml milk
  • 50ml double cream
  • 1/2 tbsp grated parmesan
  • salt and pepper
  • 1 packet of puff pastry

Cut the puff pastry into circles, slightly larger than the tart cases. Press the pastry into the tin and wrap over the sides. Mix the eggs with the cream, milk, parmesan, salt and pepper. Put 1 tbsp of caponata in each tin and divide the goats cheese between the tins. Cover with the egg mixture. Cook in a pre-heated oven at 180°C/gas mark 4 for 20 minutes. Allow to cool before removing from the tins. Serve with a rocket salad and balsamic dressing.
